This is more common if you are raising chickens at home and processing them on farm. If you let them get really big the birds don't always fit into the kill cones. Or they will fit inand you won't be able to easily reach the head.
I just put a loop of string over the saw horse, branch, pole, whatever you're using that you can then use a "larks' head" knot to put a simple loop around the birds' feet. Whichever way you do this process you want to be quick about it.
As you can see from the video the bird I'm handling is calm and not flapping around. Being up-side-down calms the chickens and makes the process easier for the both of you. As easy as it can get I guess...
